Why should we worry about fermenting foods?  In my mind there are two major reasons (and one minor perk!):

1. It’s what our ancestors did: you can find record of various fermented foods throughout history.  In traditional societies, they almost always had a source of fermented foods in the mix, to provide enzymes, probiotics, and would preserve their foods besides.

2. It benefits our health: I can’t really say definitively that the probiotics in fermented foods fights off infection, or benefits you immune system, but I can say that these foods are tasty and I find that I feel better when I eat them 😉

3. Fermented foods are yummy!: I don’t know about you, but I love eating sauerkraut and milk kefir smoothies.  And I cannot tell you how good it feels to drink fresh beet kvass or sparkling water kefir.  I hope that some of you were interested, because this class looks amazing.  The best part is that no matter what, whether you are on GAPS or are vegetarian, you will find the information useful.  We can all use a little more probiotic goodness in our lives!
