This panini is a glorious creation that tastes like indulging in a bed and breakfast-esque spread.  It’s all my favorite things together: sourdough, whole cane sugar, honey, almonds, raspberries, vanilla, and cocoa.  Plus, it’s just plain pretty!

Couple it with this homemade cocoa almond spread, and the combination of the sour bite from the bread and raspberries with the sweet chocolate is wonderful.  And like most sweets I make, it’s not too sweet.

Make this for a weekend breakfast, or for a breakfast-for-dinner dinner party.  I think it will be an elegant hit!

Equipment Needed:

Cocoa Almond Butter Sourdough Panini with Fresh Raspberries

2 pieces sourdough bread (find sourdough starters here)
2-4 tablespoons butter (find grass-fed butter here)
4 tablespoons Cocoa Almond Butter (get the recipe below)
raspberries (organic, if possible!)
powdered whole cane sugar (find whole cane sugar here)

  1. In a cast iron skillet, heat over medium heat until warm, about 5 minutes.
  2. Spread the butter on one side of the sourdough bread and set butter side down in the pan.
  3. Spread the other side with cocoa almond butter.
  4. Butter the other piece of bread and place it butter side up on the cocoa almond butter.
  5. Cover with a lid for 2-5 minutes, until the bread and cocoa almond spread is warmed through and the buttered piece of bread on the bottom takes on a beautiful golden color.
  6. Flip over with a spatula, then cover the pan again for another 2 minutes or so, or until the other side of the panini is browned and golden.
  7. Remove from the pan, and cut in half.
  8. Place on a plate and sprinkle with raspberries and powdered sugar.  Eat!

Cocoa Almond Butter Spread

2 cups almond butter (find organic almond butter here)
3/4 cup cocoa powder (find non-alkalized cocoa powder here)
1/2 cup honey (find raw honey here)
1 teaspoon vanilla extract (find organic extracts here)

  1. In a glass bowl, mix the almond butter, cocoa powder, honey, and vanilla all together until smooth.
  2. Eat!
