Banana Bread Brownies with Brown Butter Icing

This recipe is perfect for when you have some ultra-ripe, black-spotted bananas looking meaningfully at you from your kitchen counter.  Instead of turning them into the same banana bread as last time (as tasty as that is!), try these beautiful, warming brownies topped with the most delicious ingredient of all time: browned butter.

I mean, seriously.  Is there anything better than browned butter?  The answer is NO.  No there is not.  Browned butter is heavenly.

I have seen a few of these recipes floating around Pinterest, where I like to play sometimes.  But most of them call for white sugar and white flour and all that.

Fortunately, I am the master of real foodifying baked items that I find on Pinterest.  Ahem.

Don’t you worry!  I can make these banana bread brownies taste delicious, and they still have whole grain spelt flour and unrefined sugars.  The sour cream really makes them moist and tangy.

Equipment Needed:

Banana Bread Brownies with Browned Butter Icing

Spelt Banana Bread Brownies

1 1/2 cups whole cane sugar (get whole cane sugar here)
1/2 cup butter, softened (get grass-fed butter here)
1 cup sour cream (get sour cream starters here, find raw cream near you here)
2 eggs
1 3/4 cup mashed bananas (3 or 4 ripe bananas)
2 teaspoons vanilla extract* (get organic vanilla extract here)
2 cups spelt flour, freshly ground or sprouted** (get organic spelt here)
1 teaspoon baking soda (get aluminum-free baking soda here)
3/4 teaspoon sea salt (get unrefined sea salt here)
1 teaspoon ground cinnamon (get organic cinnamon here)
1/2 cup chopped walnuts (optional)**

  1. Preheat the oven to 375 degrees.
  2. Line a jelly roll pan with parchment paper and set aside.
  3. In a stand mixer fitted with the paddle attachment, blend the sugar and butter on medium high speed until light and fluffy.
  4. Add the sour cream and the eggs, one at a time.
  5. In a food processor, blend the ripe bananas until puréed.  Add to the mixer on low speed.  Add vanilla.
  6. Whisk together the flour, baking soda, salt, and cinnamon in a large mixing bowl.  Add to the mixer gradually until completely incorporated.
  7. Add optional walnuts and stir in by hand with a wooden spoon.
  8. Pour the batter into the prepared pan.
  9. Bake for 20-25 minutes or until set in the middle, browned, and fragrant.
  10. Remove from the oven and place on a cooling rack.  Make the frosting.

Brown Butter Icing

1/2 cup butter (get grass-fed butter here)
4 cups powdered sugar, organic and unbleached if possible***
1 1/2 teaspoons vanilla extract (get organic vanilla extract here)
3 tablespoons milk (find raw milk near you here)

***Or you can make your own powdered sugar from whole cane sugar, blended dry in a blender 1/2 cup at a time.  But you need 4 cups of it, so…see you in like, 15 minutes when you’re done doing that.

  1. In a saucepan, heat the butter until melted completely.
  2. Over medium high heat, watch the butter carefully while it cooks.
  3. Heat until the milk solids in the butter are toasted, fragrant, and show up as browned bits on the bottom of the pan.
  4. Immediately remove from the heat and add the powdered sugar, stirring to combine.
  5. Add vanilla and milk, stirring vigorously until smooth.
  6. Pour over the warm banana bread brownies immediately, and smooth with a spatula, butter knife, or frosting spatula.
