Texas Sheet Cake: Real Food Style



I have had a lot of trouble transitioning a handful of recipes over to real foodified versions, and they invariably contain powdered sugar in the original recipe.  For example, I have these lime cooler cookies that are to die for, but there is just no other way to make lime juice glaze without powdered sugar!  Honey is okay, but powdered sugar really makes them perfect.

But these aren’t lime coolers.  And even though the original recipe for Texas sheet cake calls for powdered sugar in the glaze, I am happy to say that my real foodified version of Texas sheet cake is not only bomb, but passed the approval of several high school aged kids that didn’t know they were eating unrefined-sugar and whole grain Texas sheet cake. In fact, all they said was “YUM!” and “What’s your website, again?”  I’ll take it!

Family Tradition: The Birthday Fairy, Yellow Butter Cake, and a Golden Birthday

My mom has a bit of magic in her.  Always has.  I think I have this magic in me, too.  Maybe it’s genetic…  My mom invented this amazing thing called The Birthday Fairy (shhh, don’t tell!).

When you wake up on your birthday, did you know the Birthday Fairy has been there?

You might be covered in glitter.  As you get out of bed, you might see a trail of candy and small trinkets leading the way from your bed to the hallway and then down to the living room where your wrapped presents lay in a pile.  You might wonder how the Birthday Fairy knew that you really, really wanted jelly shoes.  (Child of the 80’s alert: I remember thinking this!)

I have implemented this idea ever since I got married (as my initially begrudging husband can confirm), but I have really enjoyed it as my sons have gotten old enough to anticipate the Birthday Fairy coming on their special day.  Plus, this year is extra special, because not only is the Birthday Fairy coming, but she is bringing Golden Birthday themed treats and presents.  And I am making a yellow (golden) butter cake for the occasion! Irish Apple and Potato Cake

Yellow Coconut Cake with Cocoa Buttercream Frosting



Tender yellow cake is layered with fluffy cocoa buttercream, and all gently sweetened with the floral notes of raw honey.  Fresh milk, eggs with richly colored yolks, and dense coconut flour combine to make a cake of substance that won’t throw you into a sugar-spiral.  It is nice to enjoy your food without having to pay the price for it later!

This cake is moist, dense, and perfect for a birthday celebration or holiday.  Like my little boy’s birthday party!  I have missed having the yellow cakes from my childhood as I have gone through my real food transformation.  I only remember making cakes from boxes as a child.  I do not think it even occurred to me that I could make one from scratch.  Also, I just could never get it quite right with sprouted flour (though I am still determined to figure it out here!)

Update: This Yellow Butter Cake made with sprouted flour is my new favorite!  I cannot tell which one I like best, to be honest.

Butternut Cupcake with Cardamom Buttercream

Can I call these cupcakes?  They are really very moist, lightly sweetened muffins, topped with a wonderfully spiced buttercream and a sprinkling of chopped almonds.  Enjoy all the flavors as they unfold without feeling overpowered by the sweetness that so many of the “other” cupcakes fall prey to.  These golden cakes are the essence of fall, and will satisfy the young and old.

My six-year-old has a class party tomorrow where they are carving pumpkins and having store-bought treats during lunchtime.  Between being on the full GAPS diet and Halloween coming, we have been talking a lot about what he might like to have in exchange for all those candies and treats.  We have already made deals to trade his candy for quarters, and even a new toy.  But even then, sometimes, your cute, freckly little boy just wants a really tasty treat.  These cupcakes are perfect for the occasion.
